Crepes
This is a little bit in progress. Experiment and comment.
1 cup flour
3/4 tsp baking powder
1 cup milk
2 eggs
1 Tbl sugar (optional for sweet)
Metric Testing
60 grams flour
120 grams milk
1 egg
1/4 tsp baking powder
15 grams sugar (optional for sweet)
10 grams cocoa (optional for chocolate)
Makes 3 large
Separate the eggs
Beat all ingredients except the egg whites.
Allow to sit in the fridge, an hour might be ideal. This step is to smooth out the batter and is not essential. It may also be that the sitting could be done after the egg whites are folded in.
Whip egg whites until firm.
Fold egg whites into the batter.
Cook on crepe makers, using a spreader.
