Sorbets

Note: Add 2-3 t vodka to every sorbet to improve texture

Lemon Sorbet

1 3/4 cups sugar

2 cups water

1 1/2 cups freshly squeezed lemon and lime juice

1 T finely shopped lemon zest

    • Boil water and sugar simmering 5 minutes to make simple syrup, cool completely.

    • add lemon juice and zest

    • process in machine 25 to 30 minutes

Mango Sorbet

4 ripe but firm mangoes, about 12 oz each, peeled, pitted and cubed

2/3 cup sugar

1/2 cup corn syrup

6 T fresh lemon or lime juice

    • food processor or blend all ingredients until thick and smooth

    • process in machine 25 to 30 minutes
