Rhubarb Strawberry Crunch

3/4 cup sugar

6 T tapioca (instant)

3 cups sliced strawberries

3 cups diced rhubarb

1 t orange zest

Topping

3/4 cups flour

1/2 t salt

3/4 cup packed brown sugar

1/2 cup butter

1/2 cup rolled oats

1/2 cup sliced almonds

    • preheat oven to 375

    • mix sugar, tapioca, strawberries, rhubarb, orange zest

    • place mixture in a 9X13 baking dish

    • mix flour, brown sugar, salt, butter, almonds and oats until crumbly

    • bake 45-55 minutes until crisp and lightly brown
